Now is fall again and things are settling down, the kids are back to school, family is back home and I have a little bit more time to do the things I love!<br />
I have been inspired to bring back this old recipe when one of my friends, lately, was diagnosed with celiac disease.<br />
One of my first posts was about my experience with gluten free foods and how I struggled to find recipes that were worth eating.<br />
Of course bread, pizza and pasta are the three foods more involved when it comes to gluten free: how can I give up my toast in the morning or my favorite slice of pizza for lunch or that amazing lasagna sunday night? Well I'm still working on the lasagna one, even though my parmiggiana with eggplant is a very good substitute,(I'll post it soon), but pizza and bread are "problem solved".<br />
I already post my recipe for a gluten free pizza crust so I'm going to share this bread recipe for those of you that really need that toast in the morning or a good old sandwich but are on a gluten free diet.<br />
For this bread I used the same "all purpose flour mix" that I used in the gluten free pizza crust...So go check that post out to find it. ;)<br />
But if you have a "gluten free flour mix" that you love you can use that.<br />
As I said before I found a prepackaged mix called "Celimix"that works well too!<br />
The method I'm using to make this bread is from "Healthy bread in 5 minutes a day"<br />

GLUTEN FREE BREAD<br />
3 cups gluten free flour mix<br />
2tsp yeast<br />
1 tsp salt<br />
1TBLSP Xanthan Gum (If you use my flour mix recipe you won't need this)<br />
2 eggs<br />
1/4 cup canola oil<br />
1TBLSP honey<br />
1 1/3 cups of warm water<br />

After 2 hours dump the dough on top of parchment paper... It is gluten free so very different then normal bread dough, it will be a little sticky and you'll need to shape it and make it "soft looking" with your hands: just weat your hands and gently "caress" the dough until it is a nice soft shape.<br />

Preheat the oven at 450, put a casserole or a cast iron pot anything with a lid in the oven....<br />

Put the bread in to the hot casserole, (careful), cover and put back in the oven for 30 minutes, after that take off the lid and cook for 10 more minutes....<br />

When I met my canadian husband in Italy, he didn't speak lots of italian, and I didn't speak any english, so we tried our best to communicate. It would take hours to understand a concept, we did lots of drawing on napkins and invented a variaty of words but at the end we always understood each other and had fun doing so.<br />
My husband learned to speak italian very fast, and one day he told me :" tu sei buona come la focaccia", "you are as good as focaccia", I told him that we say "as good as bread" but he replied that he liked focaccia better.<br />
How could I resist to a sweet canadian telling me that with such a cute accent?<br />
Well I didn't, ahahaha!<br />
Anyway here it is , a focaccia recipe that you will love too.<br />
Usually focaccia is made with white flour but I change that and in this recipe I used unbleached and whole wheat flour, just to feel a little less gilty but you can use all white if you like.<br />

I grew up in a little village in the mountains in Italy. My dad always had a big garden where he grew all types of veggies: tomatoes, zucchini, peppers, carrots,celery you name it!<br />
We had our own olive trees and our own grapes to make wine, apples, pears, plums and strawberries.<br />
Of course when I was little I didn't understand how lucky I was to have access to fresh fruits and veggies.<br />
I just thought it was a lot of work to grow something when you could easily buy it at the store.<br />
Now one of my happiest childhood memories is the one of me and my dad in the garden, he would put a big blanket under one of the trees and I would sit there eating fruit while he would work.<br />
There is nothing that compares to the taste of a tomato freshly picked from the garden.<br />
There where those days when my mom had so many veggies she didn't know what to do.<br />
One of her favorite things to make was this veggie dish that she called "Peperonata", I think that it was my mother's version of "Rattatouille".<br />
Anyway, this dish is really really easy, it takes 20 min to prepare and it is a healty yummy side dish for a meat meal or great idea for lunch served with a nice home made whole wheat baguette.<br />

Cannelloni are tubes of pasta stuffed and baked and it is one of my favorite things to make because they are very versatile.<br />
I don't think that there is an exact recipe for cannelloni, some use veggies, some use meats, some make them in a cream sauce, some in a tomato sauce and some use bechamel.... So really it is just a matter of what you like.<br />
No matter what you use they are going to be great and they are very easy to prepare.<br />
I use dry cannelloni tubes, they are much faster to stuff and easier to handle, but you can use fresh pasta sheets if you like the challenge.<br />
I'm very creative when I cook, I like to change it up and I like to use what I already have in the fridge if possible. So feel free to do the same, in the meantime try this recipe!<br />

Cannelloni<br />

4 cups of your favorite pasta sauce, I made a simple, simple tomato sauce for this.<br />
5 turkey sausages ( you can use mushrooms if you don't want meat)<br />
1 onion chopped<br />
500g ricotta cheese<br />
2 cups fresh spinach<br />
1 pakage of dry cannelloni<br />
1 cup mozzarella shredded<br />
4 TBLSP olive oil<br />
parmiggiano cheese for sprinkle<br />
salt and pepper to taste<br />

Make a pasta sauce, I just cooked some garlic in oil and add crushed tomato, salt and pepper and let boil for 30 minutes. Easy easy.<br />

So I have never learned how to bake cookies.<br />
But then I moved here, in Canada, and it all changed.<br />
Everybody would come over and bring cookies or we would go somewhere and they would offer us cookies... My husband, loooves cookies, so, at the time, I felt like I really had to master the art of making cookies!<br />
So I started looking for some recipes and started my "cookie journey", but what was so easy to make for some, was definally not so easy for me.<br />
With "years" I got better, but still to this day I don't think that I yet make those kind of cookies that make my husband drool!<br />
I'm still a little bit jealous of my husband's reaction to my friends cookies.... But at least he doesn't tell me that I'm a terrible baker anymore and my cookie jar gets empty pretty fast!<br />
This recipes is one of my favorites.<br />
Now that I have kids I'm always looking for recipes that have some healthy ingredients in them without taking away the fun and plesure of having a sweet treat.<br />
My husband gave them the name "Muffin cookies".<br />

Muffin cookies.<br />
<br />
1 3/4 cups unbleached all purpose flour<br />
1/4 tsp salt<br />
1/2 tsp baking poweder<br />
1/2 tsp baking soda<br />
1/2 tsp cinnamon<br />
1/2 cup butter<br />
1 cup brown sugar<br />
2 eggs<br />
1/2 cup oatmeal<br />
1 1/2 cups dry cranberries<br />
1 apple peeled and diced in little cubes<br />
<br />
Preheat oven to 350.<br />
Mix all ingredients in a mixer or with a spoon in a bowl.<br />

Rosticcierie are places where you go for a quick snack/lunch to go, they are the italian version of fast food but the food is fresh and delicious.<br />
They have all kind of stuffed veggies, grilled meats or seafood, stuffed breads and all type of food that you can snack on.<br />
One of my favorite are "Suppli", balls of rice stuffed with a little bit of mozzarella cheese.<br />
I would often go and have a few Suppli after class or after work, they were very inexpensive but super tasty.<br />
This recipe is very simple, it is a great way to use left over rice and it is an awesome idea for the kids lunches. Very good warm and still good cold.<br />

2 cups cooked rice<br />
1 can tomato sauce (you can use pizza sauce too)<br />
1cup mozzarella cheese cubed<br />
1 or 2 eggs (star with 1 use more if you need)<br />

When I made spanakopitas the other day, I was left with lots of spinach mix because i didn't have enough phillo pastry.... Yes that's me, super organized mom!<br />
So, after thinking and thinking what to do with it, I decided to make a pie with this puff pastry recipe that I found in one of my old italian cook books.<br />
Usually making puff pastry from scratch takes a long time, but if you have been reading my posts, you'll know by now that I 'm not the patient type.<br />
This puff pastry recipe is really easy , mix the ingredients and you are good to go.<br />
You can use it for savory pie and sweet ones too.<br />
A "must have" recipe that will impress your family and friends!<br />
<br />
QUICK PUFF PASTRY<br />
<br />
2 1/2 cups flour<br />
<br />
1 1/2 cups butter (not melt)<br />
<br />
3/4 cup water<br />
<br />
1/4 tspn salt<br />
<br />
If you have a mixer, put all the ingredients in and mix until a ball forms.<br />
If you don't have a mixer, cut the cold butter in little cubes and mix with the flour, with the tips of your fingers grab the flour and the butter and crumble the two together until the butter is mixed with the flour in a nice fine/crumbly flour compound.<br />
Add salt and water and mix until you have a ball, knead a little to make it nice and smooth.<br />

I used the filling for the spanakopita, (check my post), to that I added 4 slices of bacon, cooked and crumbled and some paprika.<br />

Put the pastry in a well greased and floured baking dish making sure to press the pastry well on the sides... You want the filling to stay in.<br />

Friendly Canadians always shared their kitchens with me, they watched me cook my simple meals and they always enjoyed eating my food.<br />
So, as I shared my Italian recipes and improved my english, I made lots of good friends and all of them where willing to share their recipes.<br />
My friend Pat gave me this "spanakopita" recipe in exchange of my "sweet and sour chicken wings"!<br />
Of course this recipe is Greek not Italian but once in awhile it is good to change it up a little.<br />
Phillo pastry might be a little intimidating for some people but there is nothing to be afraid of, my 4 year old daughter helps me with the folding and the brushing.... If she can do it you can too!<br />
And for those of you who relate phyllo to an enormous quantity of butter.... Relax, this recipe uses only 1/4 cup of olive oil... I guess that's my italian version, ah ha!!!<br />
These cute triangles of goodness are a great idea to bring to potlucks or to eat as appetizers.<br />
You can make them way ahead of time, cook them and freeze them and use them when you need .<br />

Spanakopita<br />
1 pakage of phyllo pastry<br />
2 pakages of frozen spinach (thawed) (you can use fresh too)<br />
400gm of feta cheese crumbled<br />
2 eggs<br />
1 onion chopped<br />
2garlic cloves chopped<br />
1 tspn dry dill<br />
1 tspn dry origano<br />
1/4 cup olive oil for brushing<br />
3 TBLS olive oil<br />
<br />
In a frying pan heat 3 TBLSP of oil and cook the onion, garlic, dry dill and dry origano for 5 minutes, set aside.<br />

Sunday was the only day of the week where we were all home at the same time for lunch, the only day that we could actually enjoy our meal together without rushing to work or classes or weatever kept us busy from Monday thru Saturday.<br />
Sunday was "cream" day, the day were the meal was white , didn't matter if it was pasta or veal as long as it was cooked with "panna" .<br />
I didn't realize then that these dishes needed very little preparation, i thought that my mom was in the kitchen cooking all morning to make the special Sunday lunch that we all loved so much.<br />
Cream is a very fast way to make food delicious while making it look nice and sofisticated.<br />
My brother's favorite was "tortellini con panna e salsiccie", tortellini with cream and sausages and today this recipe is one of my family's favorites too.<br />
Easy and fast to make, it is quite filling so you'll only need a nice salad to go with it..... After all, Sundays are special and you don't want to spend it working in the kitchen all day.<br />
Go on then "cream it up".<br />
<br />
Tortellini with cream and sausages<br />
<br />
1 package of tortellini (700gm)<br />
5 italian sausages<br />
6 TBLSP olive oil<br />
3 garlic gloves chopped<br />
2 170ml can of thick cream<br />
salt<br />
chilli flakes or pepper<br />
<br />
Peel off the sausages casings and brake the sausage meat with your fingers.<br />
Heat the oil in a frying pan and cook the garlic.<br />
Add the sausage meat and cook, try to crumble it up with a woodden spoon while it cooks.<br />
When the meat is cooked add the cream , stir, add some salt and as soon as you see the cream boiling turn the heat off.<br />
Cook the tortellini in salted boiling water, when ready mix them in the cream sauce.<br />
Sprinkle with chilli flakes or pepper.<br />

Well, I had!<br />
As a result I came up with this italian stir-fry, very easy to make and so fast too!<br />
So, while your kids are in the bathtub, chop up some veggies and meat, and by the time daddy comes home, dinner will be ready, the kids will be settled and what looked like a nightmare at 5:00pm is a perfect life at 6:00pm.<br />
So pour your self a glass of wine because life is good.<br />
<br />
Stir-fry italiano<br />
<br />
NOTE: i used these veggies and meat because it was what i had; but feel free to be creative with what you have in your fridge:)<br />
<br />
1 big stake cut in strips<br />
1 zucchini cut in strips<br />
1head of broccoli<br />
15/20 asparagus<br />
6 garlic cloves (you can use less but i like it)<br />
1/2 cup flour<br />
1 tspn salt<br />
6 TBLSP olive oil<br />
3/4 cup beef stock<br />
2TBLSP wine<br />
2TBLSP agave (you can use brown sugar)<br />
2TBLSP soysauce<br />
pine nuts<br />
cooked rice or noodles<br />
<br />
Get your veggies and meat nice and ready.<br />
In a bowl, mix the flour and salt and toss the meat in untill well coated.<br />
In a big frying pan, heat the olive oil untill hot; put the meat in and cook.<br />
Put the meat aside and put the veggies in the pan with the stock, cover and cook untill the veggies are ready , 10 minutes or so.<br />
In the meantime mix together wine, agave and soy sauce.<br />
Add the meat back to the pan with the wine sauce, mix and cook for 5 more minutes and you are done!<br />
Put a good amount of stir-fry on top of rice or noodles and sprinkle with pine nuts and hot sauce if you<br />
like.<br />

The beauty of it all is that this is a really easy dish to make, only a few ingredients to put together and that's it .... The smell in your house will make everybody hungry so make sure to make enough.<br />
You can freeze the sauce and use it within a month.<br />
If you are a vegetarian you can use "veggie bacon" insted of the real deal and if you rather have something "less fatty" use turkey bacon, it will be equally delicious.<br />
So, go on and try this easy pasta recipe and make your husband,(or your wife), fall in love with you all over again.<br />

PASTA AMATRICIANA<br />
<br />
1 small onion chopped<br />
2 or 3 garlic cloves minced<br />
6 TBSP olive oil<br />
1tspn chilli flakes (this is optional depending on your taste)<br />
6 slices of bacon cut in little pieces<br />
12 oz can of plain crushed tomato ( you can use fresh tomatoes and crush them in a blender)<br />
salt and pepper to taste<br />
500gm pasta (penne, rigatoni, fusilli ....)<br />
parsley<br />
parmiggiano cheese (the real deal )<br />

In a frying pan put the olive oil, onion, garlic and chilli flakes ,(if you are using them), cook for a few minutes untill the onion and garlic are nice and gold, add the bacon, cook for a few minutes.<br />
Add the crushed tomato, salt and pepper , stir, bring to a nice boil on medium/high heat, put a lid on the pan leaving a little open space, ( i usually put a wooden spoon between the lid and the pan), reduce to low and let cook for about 30 minutes. stir occasionaly.<br />
Cook the pasta according to package and mix it with the sauce.<br />
Sprinkle with parsley and parmiggiano cheese.<br />

When we where growing up she never baked cookies or cakes or anything sweet really, so I was surprised when she made this cute "ciambelline" shaped like ribbons.<br />
They are not overly sweet and in Italy they dip them in "mosto", the very first juice that comes out of pressed grapes before the wine process.<br />
My kids love them so much and my son gave them the name "St.Lucia ribbons"....<br />
... Anyway this could be a little treat that you can bring to a friend's dinner with a nice bottle of sweet wine or you can just dip them in your "Caffe latte" in the morning.<br />
They last forever and the harder they get the better they are for dipping; but don't worry they will be gone before you know it.<br />
Here is the recipe:<br />

St.LUCIA RIBBONS<br />
<br />
3 1/2 cups unbleached flour<br />
1/2 cup milk (i used soy milk vanilla flavor)<br />
1/2 cup white wine<br />
1/2 cup sugar<br />
1/2 cup canola oil<br />
1TBLP+1/2tsp baking powder<br />
1tsp anise ground ( you can put more for a stronger flavor if you like so)<br />
1 tsp vanilla (if you use normal milk)<br />
1 cup raisins (i used cranberries because i didn't have any:P)<br />

Preheat oven 350<br />
Mix all the dry ingrediets first , add the wet ingredients until you have a nice soft ball , take a little piece, the size of golf ball, and roll it out like a snake and fold one side on top of the other to make the shape of a ribbon .<br />
Keep doing that until your dough is finished.<br />
It makes 20 ribbons more or less.<br />
Bake them for 25/30 minutes untill slightly golden.<br />
Put them on a rack and let cool.<br />
Enjoy.<br />
