Suppli di riso. Rice balls.

One thing that I miss from Italy is the "Rosticcieria".
Rosticcierie are places where you go for a quick snack/lunch to go, they are the italian version of fast food but the food is fresh and delicious.
They have all kind of stuffed veggies, grilled meats or seafood, stuffed breads and all type of food that you can snack on.
One of my favorite are "Suppli", balls of rice stuffed with a little bit of mozzarella cheese.
I would often go and have a few Suppli after class or after work, they were very inexpensive but super tasty.
This recipe is very simple, it is a great way to use left over rice and it is an awesome idea for the kids lunches. Very good warm and still good cold.

Rice balls, suppli.

2 cups cooked rice
1 can tomato sauce (you can use pizza sauce too)
1cup mozzarella cheese cubed
1 or 2 eggs (star with 1 use more if you need)
1cup bread crumbs
canola oil for frying

Put the rice in a bowl....


Add the tomato sauce and mix well...


Take a spoonful of rice and put a cube of mozzarella in the middle...


Roll in to a ball....


Roll it in to the egg....

And in to the bread crumbs....

Keep going until your rice is finished....

Fry the balls in hot oil....


Until they are nice and golden....


Eat them with your favorite sauce:)
