One thing that I miss from Italy is the "Rosticcieria".
Rosticcierie are places where you go for a quick snack/lunch to go, they are the italian version of fast food but the food is fresh and delicious.
They have all kind of stuffed veggies, grilled meats or seafood, stuffed breads and all type of food that you can snack on.
One of my favorite are "Suppli", balls of rice stuffed with a little bit of mozzarella cheese.
I would often go and have a few Suppli after class or after work, they were very inexpensive but super tasty.
This recipe is very simple, it is a great way to use left over rice and it is an awesome idea for the kids lunches. Very good warm and still good cold.

Rice balls, suppli.

2 cups cooked rice
1 can tomato sauce (you can use pizza sauce too)
1cup mozzarella cheese cubed
1 or 2 eggs (star with 1 use more if you need)
1cup bread crumbs
canola oil for frying

Put the rice in a bowl....


Add the tomato sauce and mix well...


Take a spoonful of rice and put a cube of mozzarella in the middle...


Roll in to a ball....


Roll it in to the egg....

And in to the bread crumbs....

Keep going until your rice is finished....

Fry the balls in hot oil....


Until they are nice and golden....


Eat them with your favorite sauce:)

Quick puff pastry , Spinach pie.

This is just a quick post; as quick as this pie recipe.
When I made spanakopitas the other day, I was left with lots of spinach mix because i didn't have enough phillo pastry.... Yes that's me, super organized mom!
So, after thinking and thinking what to do with it, I decided to make a pie with this puff pastry recipe that I found in one of my old italian cook books.
Usually making puff pastry from scratch takes a long time, but if you have been reading my posts, you'll know by now that I 'm not the patient type.
This puff pastry recipe is really easy , mix the ingredients and you are good to go.
You can use it for savory pie and sweet ones too.
A "must have" recipe that will impress your family and friends!

QUICK PUFF PASTRY

2 1/2 cups flour

1 1/2 cups butter (not melt)

3/4 cup water

1/4 tspn salt

If you have a mixer, put all the ingredients in and mix until a ball forms.
If you don't have a mixer, cut the cold butter in little cubes and mix with the flour, with the tips of your fingers grab the flour and the butter and crumble the two together until the butter is mixed with the flour in a nice fine/crumbly flour compound.
Add salt and water and mix until you have a ball, knead a little to make it nice and smooth.

SPINACH PIE

I used the filling for the spanakopita, (check my post), to that I added 4 slices of bacon, cooked and crumbled and some paprika.



Take the ball of puff pastry and cut in half, roll out the first piece nicely.




Put the pastry in a well greased and floured baking dish making sure to press the pastry well on the sides... You want the filling to stay in.


Put the spinach mix, or whatever filling you are using, inside.


Roll out the other piece of puff pastry and put it on the top, sealing the edges and cutting off excessive pastry. You can use those to decorate the top of the pie .


Brush with an egg and bake at 350 for 45min. to 1 hour, until the crust is nice and gold.
