Gluten free pizza crust

Hello hello again!
A few months ago I went gluten free.....
...That is a big deal for me because  i'm  italian and gluten comes with my birth certificate: breads , pastas, pizzas, well you get the idea!
I started making all these foods with brown rice flour, amaranth, sourghum, tapioca, you name it; but with my big disappointment nothing would come out good!
Gluten has a magic power to make everything nice and fluffy and when you take that out it is a big challenge .
I had to put aside my "knowledge" of how to cook and start from zero, find new ways to make a loaf rise or a pizza stay in one piece and not crumble away.
I'm not going to tell you how many "things" went wrong and into the garbage...
After trying different combinations of flours I realized that the "starch" flours are a little bit more light and manageable then other  types, chickpea, for example , for me, has a strong after flavor that I couldn't get used to, buckwheat was to heavy and made everything dense , but this is my little personal experience, i'm sure that there are lots of beautiful people out there that can make great things with those flours.
Anyway there are lots of prepackaged mix flours that you can buy and use in recipes, and I found one that actually works pretty well. It's called "Celimix" rice bread mix.
But for those of you who want to be a little more adventurous, here is a recipes I found to make your own.
GLUTEN FREE ALL PURPOSE FLOUR

1cup cornstarch
1cup potato starch
1cup white rice flour
1/2 cup corn flour
1/2 cup tapioca starch
1TBLSP +1tsp Xanthan Gum

I'm back on gluten now, but before I did that I had to prove that gluten free foods can be "delizioso" too. I made a pizza one day; after many "not so good ones", this one came out amazing... I couldn't tell the difference... ok maybe I could, but still I was impressed. Finally I had done it, I had made a delicius gluten free pizza!

Here is the recipe: GLUTEN FREE PIZZA CRUST

1 1/2 cup gluten free flour (you can use the recipe above or a prepackaged one)
1 tsp backing powder
1 tsp honey
1/4 cup milk (you can use soy)
1/4 cup vegetable oil (Canola oil works well too)
1 egg

Mix untill you get a soft ball , (add some flour if you need to)
In a well oiled pizza pan spread the dough gently untill you reach every corner , remember this is a gluten free crust so it will look different that a normal one.
Preheat oven a 400
 Before putting any condiment on the crust cook the crust for 10 minutes
After that put anything you want in to your pizza and cook untill the crust is nice : and golden, about 10/15 more minutes.
I did mine with garlic, artichock, spinach, olives , onions and peppers.

  1. Is it actually 1/12C flour or was it supposed to be 1 1/2? I wanna try this but wanna make sure I do it right! Can anything be substituted for the olive oil to cut down on fat content?

    1. Hello :) yes it is 1 1/2 cups of flour sorry about that !!! i'm going to fix that right away!
      This recipe is with vegetable oil but i often use canola oil insted and works just fine.
      Just make sure that the oil you use has a mild flavor .
